Easy Crispy Rice Tuna

Claire Brogdon

If you know me, you know I LOVE a crispy sushi rice of any kind. I wanted to replicate the recipe for at home, using ingredients I keep stocked around the house, such as canned tuna. There are many ways to create the crispy rice effect, but my easy and simple recipe requires a mini waffle maker. You can customize this recipe to make the tuna any way you prefer. I change it up, sometimes I create the tuna salad using a light drizzle of olive oil, sriracha, and seasoning of choice. Other times, I crave a mayo-based tuna salad. Feel free to add onions, cucumbers, capers, or jalapenos to the tuna mix or as a topper.

To get the rice crispy, simply heat the waffle maker, fill it with the desired amount of sushi rice and toast exactly how you would cook a waffle. I usually cook mine for 5-6 minutes to get it extra crispy, but not burnt!
