The Jennifer Anniston Salad
My Absolute FAV salad, I make it at least every other week! It’s so filling, delicious and healthy! This salad feeds my Fiancé and I for two meals. Cut the recipe in half or double it depending on the number of people your feeding! Simply dice, pour, mix and enjoy! The most delicious of meals don’t have to be complicated!
Ingredients:
1 CAN OF CHICKPEAS
1 CUP QUINOA
1 RED ONION
1 CUCUMBER
1/2 CUP FETA
1/2 CUP CHOPPED WALNUTS
1/4 CUP CHOPPED MINT
1/4 CUP CHOPPED PARSLEY
Salad Dressing:
1/4 CUP OLIVE OIL
1/4 CUP LEMON JUICE
DASH OF MINCED GARLIC
SALT/PEPPER
